Recipe: Herb crusted chicken with sautéed veggies

A quick and easy 20 minute dinner!

Ingredients:
2 chicken breasts, sliced in half to create 4 pieces
1/4 bag of frozen broccoli
1 tub of fresh baby portabella mushrooms
thin slices of vermont sharp cheddar cheese
1/2 tsp dried parsley
1/2 tsp garlic powder
1/2 tsp crushed red peppers
1/2 tsp black pepper
1/4 tsp paprika
1/4 tsp cumin
1/4 tsp salt
1 tbsp Italian seasoned bread crumbs
2 tbsp whole milk
4 tbsp butter
2 cloves finely chopped garlic
2 tbsp olive oil

Directions:
In a bowl mix sliced chicken breast with olive oil, salt, pepper, cumin, paprika, garlic powder, dried parsley, bread crumbs and milk. Make sure the herbs and spices are well rubbed down on the breasts and they are fully soaked in the milk. Place in the fridge for 10-15 minutes so the ingredients can absorb well. Preheat oven to 400F, in a lightly oiled pan place the chicken pieces, top with cheese and sprinkle more bread crumb on top to choice. Bake for 20 minutes. Meanwhile prep your vegetables. In a saucepan melt butter on medium heat, add in the chopped garlic and defrosted broccoli. Saute broccoli until its a bright green color and not too limp in texture, leaving butter in the pan remove the broccoli and add in mushrooms. Add more butter/garlic if you feel necessary and saute mushrooms until they began to form a sauce. Once you're chicken is ready, plate with veggies and serve. This recipe makes enough for 2 (or 1 hungry person!).

As a bonus I thought I'd include below my absolute favorite go to breakfast meal. I love this recipe and haven't gotten store bought pancake batter in almost a year! My son requests pancakes at least once a week and loves to help me make them. I love how fluffy these turn out and its the best way to add in fruits like blueberries, strawberries or craisins without my picky eater creating a fuss.

Pinterest Inspired Party!


At the beginning of February I held a lunch at my place for a couple of friends I've met in the few months since we've moved here. Between all our mini trips out of town and our two trips to NJ, I hadn't had a chance to invite anyone over and I took this as an opportunity to put to work some of the great party ideas I had been pinning on Pinterest. Also, since the Superbowl and Valentine's Day are February's two major occasions I figured I'd try to incorporate them in some way. 


My party was on Saturday before the Superbowl, but none of us girls really care much at all about football so the only way I chose to incorporate the Superbowl was in the menu. Superbowl parties are known to have some great appetizers and snacks that no one can resist, not even someone as apathetic towards football as myself! My two tributes to the Superbowl were cheeseburger sliders and buffalo chicken dip with pita chips. My friend Neda (who has a great makeup blog Here) made this AH-MAZING buffalo chicken dip for us a few times that I couldn't wait to try myself. It was really so simple to make and it's one of those snacks everyone keeps eating throughout the party. 

The rest of my party menu was: Cajun Shrimp Pasta (SO GOOD, I had none left!), Kale Quinoa Salad (which turned out amazing yet again. You know a salad is good when people willingly take it home with them!!), and bruschetta

Now to include Valentine's Day into my party I tried my best not to go crazy on pink, red and hearts but its nearly impossible for me to not go overboard with anything. I tried to find sweet yet subtle items. For example, I made German chocolate cupcakes with a coconut vanilla frosting which I dyed pink using food coloring and I baked them in a silicon heart shaped cupcake pan I got from Target a few years ago, seen in this post. I also found some adorable items in the $1 section of Target which I couldn't resist. Like a small felt hearts banner, which was used as the backdrop to our photo booth. Instead of doing the usual sodas for drinks, I had (store bought) pink lemonade and put frozen berries to keep the drinks chilled. It was hard to keep away from all the overload of Valentine's day since I love themed parties SO much, but I realize just using a few themed ideas was a good way to go about it without seeming like cupid threw up all over everything.





'Pinspired' Ideas:

Mason Jars! I've been seeing these on Pinterest for a long while now, and I did my best to not fall into the trap of liking something just because it's popular, but seriously they are SO cute looking! They really added a chic feel to the party. By serving pink lemonade in them with a striped paper straw it caught everyone's attention since as something out of the normal soda in a glass way to serve drinks.  I got mine at Walmart 12 for $9 and the paper straws were from Target's party decor section, I think 20 for $2. 


Photobooth ideas are all over Pinterest. Originally I thought to make my own props, but when Target had a whole bag full of them for just $5, how could I turn it down? ;) I kept it simple with just a banner against our white wall and since we had a bunch of kids at the party, it kept them busy for a solid 15 minutes while we were able to take a gazillion adorable pictures of which maybe 3 came out nice. I liked this idea because it gave us something different to do than the usual munching and chatter without being too involved like playing organized games. 


Fruit Cones are such a simple yet fun way to make dessert look classy! Since I had some pretty heavy items on my lunch menu for the healthy eater I thought these fruit cones were a nice dessert alternative, plus the kids even liked how pretty they made the fruit look and were happy to snack on them.


Okay so I only partly tried to keep dessert healthy. Because when I saw these S'mores Brownies on Pinterest, all self control was lost. They were definitely a gluttonous addition to my dessert menu but one I do not regret. Ok maybe a little. Just imagine sweet gooey melted marshmallows sandwiched between a decadent chocolate brownie with a layer of crunchy graham cracker thrown in! I swear I have no self control. But they're SO worth trying!

Also, my husband is a Valentine's baby and as you may remember from my post last year I tend to get super cheesy with my ideas to celebrate his big day. So this year was no different. I turned to my beloved Pinterest for ways to surprise him. He grew up outside of America and is a HUGE fan of international chocolate bars. I'd seen some adorable cards using candy bars but I knew they wouldn't work for him since he's not really into Snickers, Mr Goodbar etc. I started leaving him little messages all week with chocolate bars attached, next to his keys or in his laptop bag and then on his actual birthday I gave him the card with a whole bunch added on. I forgot to take pictures of the ones from earlier in the week but it was something like 'Thanks for not being a FLAKE, you're an awesome husband and a great dad. We love you' and 'Hey Handsome, the AERO of my heart points to you!'



Now that Ali is old enough to understand birthdays, I had him make a present for his Baba too. Of course the idea was Pinterest inspired and it worked out pretty nicely. I bought poster paper and paintbrushes from the dollar store and Crayola washable paint from Target for $4, which we had LOADS of fun painting with in the bathtub afterwards. My advice is to practice the hand and footprint first on regular paper so you get the hang of it, before you attempt it on the actual poster. It was a fairly cheap craft with a result that looks so stinkin' adorable; we're planning to get a nice frame for it to put up in Ali's room.

Lastly, I tried to make these adorable strawberry roses and here is where the phrase "Pinterest Fail" comes to mind. They weren't as easy as they looked and definitely very time consuming. I was only able to get 3 done before I realized my husband wouldn't wait more than 3 seconds to devour them and he couldn't care less how his strawberries look, but he does love them dipped in chocolate! Lesson learned. I thought my plate looked cute and the hubster was certainly impressed with all of my creative attempts.

Recipe: Zucchini carrot bread with chocolate chips and walnuts


I have a serious problem. I can't stop baking. 

This week I started intense potty training with Ali. He'll be 3 in December and I am hopeful to have him trained by his birthday. We're doing the cold turkey method, no pull ups. It's supposed to be the most effective and quick which it has proven to be, but it also is the most exhausting, mentally draining and is a likely candidate for extreme forms of torture. Let's just say I did NOT need to be baking while trying to accomplish this task. 

So despite a serious backache from all the bending down to clean and jerking out of the way to avoid being sprayed on it's been a decently successful few days. He's learned to keep his number twos in the toilet and number ones are getting better. Enough toilet talk. I know that's not why you came here. 

This recipe is a bit more involved than others I've attempted before, mostly because of the added step of grating zucchini/carrots and that probably took me longer as I did it while running back and forth between the kitchen and bathroom. Nonetheless, it came out tasting pretty delicious and my chocolate loving husband/child have already devoured more than half of it (IN ONE DAY). This is a great way to get picky eaters to have their veggies without knowing it! 

I also used baby carrots not whole carrots (gasp unhealthy I know, I like the taste of chemicals what can I say) and grating those is a torturous task in itself. I would say you could barely taste the carrot so maybe using real carrots is better? Or just use more? You try it and tell me!

Again, I like to tamper with recipes online to make my own so this is a blend of 1 2 and 3
Ingredients
  • 1 cup vegetable oil
  • 1½ cups granulated sugar
  •  1 cup brown sugar
  • 3 large eggs
  • 1 tablespoon pure vanilla extract
  • 2 ¾ cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 cup grated carrots
  • 1½ cups grated zucchini
  • ½ cup walnuts
  • ½ cup chocolate chips



Instructions
  1. Preheat oven to 350 degrees. Oil and flour 2 loaf pans.
  2. In a large bowl, whisk together oil, sugar, eggs, and vanilla until fully combined and slightly lightened in color.
  3. In a medium bowl, stir together flour, salt, baking powder, baking soda, cinnamon, and nutmeg. Whisk flour mixture into sugar mixture until fully combined. Add in the grated carrots and zucchini and walnuts. Stir until evenly distributed.  
  4. Divide batter evenly among the loaf pans. Top with chocolate chips and more chopped walnuts, I also like to top with a little brown sugar to give it a crunch. Bake for 45 minutes on lower rack, rotating halfway through if necessary. Turn off stove and leave in oven to cool for 5-10 minutes to ensure it is cooked through.
  5. Cool loaves in pans about 20 minutes before gently and carefully removing. Bread may be stored in an airtight container at room temperature for up to 4 days, or frozen, wrapped in parchment and foil and placed in a zipper bag for 4 months.

Oh and I nearly forgot to mention that I also made Eggplant Parm for dinner. Because I've totally lost my mind. Peeling the skin then slicing and bread crumbing the eggplant, its just all so much more time consuming than ordering pizza, which I probably should have done.  But the end result really was worth it. 

Attempt this when you have a solid 1-1.5 hrs on your hands. 

We bake, not fry, our eggplant slices  which makes me want to believe this is a healthy recipe but it tastes SO darn good to be called that. 

I'm too tired to write out the whole thing, but they do a good job of that HereTo add in more veggies I threw some frozen broccoli and sliced mushrooms into the canned tomato sauce. Also, while I put the eggplant slices to bake I roasted 3 garlic cloves on the side, then crushed and added them into my sauce. Wow does that pack in flavor or what! Hubs better get ready for roasted garlic everything.



I left my dish in for longer since I love me some burnt cheese topping but you can probably pull it out once the cheese starts to bubble.

Meal Planning - Eating Healthy



At the beginning March I started an initiative to cook more fresh meals at home. With both of us working full time and sometimes working late hours we had gotten in to a rut of having home cooked meals maybe 1-2x a week with dinner for most weeknights being a bowl of cereal, ramen noodles, or chocolate covered pretzels. Further, we never have an organized grocery list, often that meant coming back with things found on sale, like 10 boxes of pasta and sauce. This generally ended in lots of ‘spinach alfredo pastas’ or ‘grilled cheese and tomato’ sandwiches. While there isn’t anything wrong with those meals, I wanted to try something different and less carb loaded. Also, we are still figuring out where we fall on the whole organic vs GMOs debate. We go the organic route on major items like milk, bread, and eggs but will skip on other items. We just knew that eating fresh vegetables and meats with less preservatives where we can control the amount of salt and oil we put into our food was the best route to take.

With a full time job, cooking up daily meals and especially planning them out was not an easy task at 6 pm when the toddler is cranky/clingy and all you want to do is warm up something quick! So I decided to give this whole Meal Planning business seen all over Pinterest a shot. This way we could finally incorporate more vegetables into our diet, lessen the reliance on rice and pasta dishes while also creating a more structured grocery list for specific items only. This month my main focus was soups. Being in last stretch of winter (hoping it’s the last!), making a warm bowl of soup is the perfect way to heat up on a cold night and it’s the best way to incorporate loads of healthy ingredients too. I planned it out so that we would only have chicken (no beef!) with rice once a week, Daal with chapati bread once a week and some form of vegetable soup weekly (the remaining days being for leftovers! Working Mama only cooks hot meals 3 days a week shooooot!). It worked out well because we had enough soup left over most nights for lunch the next day and that meant less money spent eating out at work or less snacking on junk in attempts to skip lunch. Win, Win. 

Halfway through March we have fared well in sticking to the meal plan, here are a few pictures:

my own spin on it: onions, fava beans, potatoes, cilantro, spinach, carrots, pasta, tomato sauce, chicken broth, topped with parmesan cheese and chopped basil.

I ended up using canned tomatoes in both these recipes even though we had fresh ones at home because 1) we have a million cans of this stuff taking up space in my pantry! 2) I checked if using canned tomatoes was really all that harmful and for these two weeks I decided we’ll take our chances with BPA. 

 In two weeks the only time I’ve veered off the chart was on ‘Leftover night’ when I made a beef burger (ate it so fast no time for a picture!). I tried to keep it somewhat healthy; seasoning the beef with finely chopped green onions/cilantro, salt, pepper, and fresh minced garlic and only using half a teaspoon of olive oil to pan fry it. I topped the burger with fresh avocado slices and had it on an asiago cheese demi roll from Panera. Can I just say this burger was AMAZING. It was SO juicy and just the right amount of flavor to go with a bread that has a bold taste. This was one cheat day I’m glad I took!

I have to say, this meal plan wasn’t entirely intended to help us lose weight as much as it was to keep us away from snacking on Nutella covered everything and in that respect it was pretty successful. I have felt more full and less tempted to eat sugary, fatty snacks filled with suspicious ingredients. Girl scout cookies arrived in the house FOUR days ago and not a box has been opened, that is MAJOR. It’s a nice change to have a fridge stocked with vegetables, and being a meat lover it was a different experience having beef only once in two weeks! Being a Desi girl I love me some rice so lessening that was a tough choice, and while I could opt for brown rice instead of white, again, I’m a Desi girl and I don’t mess with that. Rice on my plate is white or not at all! But overall, I can feel the difference from the changes already. My stomach is not nearly as bloated by the end of week two as it has been in a while.

This meal plan was only for our 5 day workweek, but we plan to incorporate weekends next month. This was just a test run to see how we do. We slowly wanted to incorporate healthy eating, fresh vegetables and maybe just save chocolate indulgences for the weekend! ;)

To Health



Towards the end of 2012 I finally stopped slacking, quit my complaining and began taking my health seriously. I’m only 26 and blessed to be perfectly healthy now, but I've seen far too many examples before me of women who neglected themselves in their prime ages only to suffer many ailments later on. Women are naturally more prone to many illnesses than men are. We take on too much stress, we birth children which takes a major toll on our bodies and mostly we put our health second until it becomes blindingly unavoidable. So, as part of my New Year's resolution here’s what I am aiming to start doing now:




Facials - I started getting them monthly beginning in mid 2012 which may be a bit hefty on the pocket but even a few times a year is completely worth it. I can feel my skin looking and feeling dramatically tighter/softer and skin tone evening out. I don't have many break outs anymore, but facials have been great at getting rid of blemish marks. I know my 40 year old skin will thank myself for the efforts made in my 20s. I plan to do this more frequently, if not at the salon then definitely at home. But, truthfully the 30-45 minutes of uninterrupted Me Time where I get to chitchat with my beautician and have someone else spoil me does wonderful to alleviate stress. Less stress = less frowning = less wrinkles = Fab at 40! Or so I keep telling myself!I bought some eye wrinkle cream too (it was a sad moment, eye wrinkle cream? Me? Waahhh!). All those years of neglecting to remove my eye makeup before bed and then scrubbing it off in the morning has definitely taken a toll on my under-eyes, I'm hoping this cream helps. I'll write more about it when I see results. 


Eating fish/cod liver oil pills - I have a history of heart disease, Alzheimer's, arthritis, and diabetes in my family. Some things no matter how hard you try to avoid them, they find you. But still, prevention is better than cure. I initially started taking these pills because they are rich in omega 3 and are known to help improve hair, nails and skin. I had serious postpartum hair loss and was desperate to try anything. I began using Argan oil and Argan shampoo in September 2012, which did help at first, but it didn't seem enough. I continue to use it now but I've added in cod liver pills. Now, after 2 months of daily consumption I can already see a huge change. So Glowing even skin + No more hair loss+ Stronger nails = Majorly Happy Sania! And the real benefit is that fish oil is ideal for safeguarding myself against all the diseases in my family. So, even if I lose this battle against my genes/heredity one day, I can say I did put up a fight.


Taking care of my spine-  Another joy of postpartum I experienced was back pain. It's been two years and I really have not done a thing to improve it. My excuse was, it wasn't so bad and only really hurt in the morning when I woke up. So, I kept blaming my horrible un-firm mattress (partial truth). I finally complained enough that my husband forced me to go for physical therapy. Sure enough I have some badly tensed muscles due to the way I sit at work, carry my son and lack of stretching/working out. Two weeks of PT did not do much so I gave up (too soon I know, but keep reading) and one night I took the suggestion of a friend and put a pillow between my legs when I slept (I’m a side sleeper). BOOM. No more back pain. It’s been over two weeks and I’m feeling a lot better than I have in months, actually years! So I'm no longer paying a ridiculous $30/session copay for PT and all it took was spooning with a pillow! Also, I was suggested to a great website about yoga for stretching, but I'll write about that in my 'Soul' section. 


Drinking more water- I've read that you should drink half your weight in water, meaning if you weigh 120 lbs then drink 60 oz of water daily. That's basically 8 glasses, which is not so difficult if you drink 2 in the morning 2 at noon 2 before dinner and 2 before bed. Water is so essential to regulating all the various functions and organs within our body and I definitely forget to drink even 1 glass some days! I'm thinking the worst that can come from this is that I'll be too stuffed with water and won't have any room left to over eat! Win-win. A well hydrated body leads to a well-nutritioned soul. 

These are just a few small changes I've chosen to make in my lifestyle to improve my health and they've proven to be quite beneficial in the past few months/weeks. I'm hoping that 2013 will bring added healthy habits. Seeing my grandmother suffer with awful arthritis and heart related illnesses, while my grandfather is in an assisted elderly care facility due to his Alzheimer's has really opened up my eyes to the grim reality of old age. I've also lost two grandparents to complications of heart disease. And now with my parents in their 50s and 60s, it pains me to think about them getting old too. If  I can take actions now that help me look and feel healthy 30 years down the line, then popping a pill, sipping on water and cuddling with a pillow are things I can willingly bring into my life.

Eating Skinny!


So I stumbled up on this article and it got me thinking:

Practically everything on this list are things my Desi mother has been unconsciously feeding us for years. Remind me to thank her for the amazing metabolism I had for most of my life. I say that because lately I find my metabolism majorly slummed and it’s probably because I’ve taken out all the great stuff from my diet that I used to eat before. The more I think about it the more I realize that this may be the secret why I never saw my mother/grandmother ever doing all the crazy diets or intense exercise routines most American women succumb to in order to control their appetites. Even reflecting on myself, as a teenager while I was still eating mom’s home cooked desi meals I wasn’t thin but I was able to maintain a healthy normal weight without much struggle at all. And the moment I added in a mix of exercise into my routine I was able to drop weight quickly. Nowadays it’s like I breathe air and I’ve gaining 10 pounds!

Desi women are not skinny by nature; we have wide hips and curvy midsections. It’s just who we are. Butttt I wouldn’t call Desi women obese. The main things I see women of south Asian descent have is good self-control when it comes to food and a pretty good metabolism. I’m not talking about us Desis who grew up here and been subjected to tons of junk food loaded with sugars and carbs. I’m talking about the real home grown edition of Desi, like our moms and grandmas. I know I have AWFUL self-control when it comes to delicious food. Pizza, mashed potatoes, lasagna, and chocolate cake I can’t remember the last time when I said ‘oh I’ll just have 1 helping thank you’. But true Desi women who grew up eating wholesome home cooking just ate less and that was their unconscious effortless portion control/ weight loss regime.

So according to the article, these are the ingredients I need to bring back onto my plate:

Chili peppers – The first thing you think of when you hear the words Indian/Pakistani food is spicy. Ultimately, you aren’t a Desi if you can’t handle the heat. And it was only when I grew up and read up on it that I found out that the spicy taste does wonders for your metabolism! Yay spicy food! :)

Pine nuts- As a kid I remember my Ammi and Dadi roasting up chilgozay (pine nuts) to snack on in the winter. Meanwhile, in the summer time my mom would dry out the seeds of all sorts of fruits for us to munch on. I specifically remember cantaloupe seeds but I know pumpkin and sunflower seeds were definitely something we ate while pretty much oblivious to the massive amounts of nutrients they are loaded with. Something all women are known to do is eat out of bored, but Desi women hit it on target by nibbling on something that would suppress appetite in addition to decrease their fat stores!

Cinnamon sticks- I never knew it until I started cooking myself, but cinnamon is common a spice used in most curries. I put whole sticks of it in my Pulao to add aroma, but if you ever cook curries with garam masala it’s one of the main ingredients in it. Who knew it’s a metabolism booster?


Red Lentils – Every Desi child knows what daal is, masoor ki daal to be specific. And, whether you liked it or not you definitely ate it a few times a month if not weekly. I personally LOVE daal with kaali and khutti daal being among my favorites; plus it’s honestly one of the easiest meals to prepare. The added bonus, all the protein and good fiber in lentils is great at keeping you full for longer.

Fennal tea- I drank gallons of it post-delivery as my mom insisted it will help sooth my breastfed son’s digestion and mean less gas for him from all the things I eat. Little did we both know that it actually helped me lose a ton of my baby weight! Too bad I stopped drinking it as soon as I stopped breastfeeding; I need to get back on this stat! (buy some fennel boil it in water, tea doesn't get much simpler than that!)

Overall- After a long and tiring day at school/work, while it’s easy to pick up food at the drive thru or cook 2-minute ramen noodles (loaded with sodium and preservatives that only cause you to bloat!), small efforts like cooking up some daal and adding in a dash of ‘lal mirch’ will do your body good..


**There are a bunch of other items this article mentioned that I personally do love eating (apples, watermelon, raspberries, avocados), but they aren't very 'Desi' so I'll just mention them here and encourage everyone to add them into your diet!
